During production, many manufacturers struggle with poor gelling results due to improper temperature control. So what is the right setting temperature for gelatin?

 

 What Is the Setting Temperature of Gelatin?

 

Viscosity and gel strength are not the same concept and cannot be converted into each other. A gelatin measuring 15 0E on an Engler viscometer is very high; the comparable indicator for gel strength is bloom strength. A gelatin setting point of 23 C refers to the setting temperature of the sample at a 15% gelatin concentration. Concentration and setting temperature are not linearly correlated. Gelatin has strong water absorption: above 60% concentration, it is semi-solid at room temperature.

 

Gelatin has a weaker setting power than agar and does not set at concentrations above 5%. It typically forms a gel as a 10%-15% saturated solution. The gelation temperature varies with factors such as concentration, the type and concentration of coexisting salts, and the pH of the solution. The melting temperature is close to the setting temperature: it melts at about 30 C and sets at 20-25 C.
