Industrial gelatin is a fine chemical, classified according to its different uses. It is a light-yellow or brown granule with no unpleasant odor or visible impurities. Its molecular weight ranges from 1 to 100,000, it contains 18 amino acids, its water and inorganic salt content is below 16%, and its protein content is above 82%. It is an ideal source of protein.

 

Gelatin appears almost white or pale yellow, and is an almost odorless and tasteless, transparent or translucent solid flake or powder granule. Its molecular weight ranges from 10,000 to 70,000, while high-quality gelatin has a molecular weight between 100,000 and 150,000. Gelatin's amino acid composition is very special: it contains low-sulfur amino acids, while the content of glycine, alanine, proline and hydroxyproline is very high, accounting for 67% of the total amino acids — roughly three times the content of these four amino acids found in other mammalian proteins.

Gelatin is insoluble in cold water, but it can absorb 5 to 10 times its weight in cold water, swelling and softening. It dissolves in hot water and forms a gel upon cooling. The difference between its dissolving temperature and setting temperature is very small: it dissolves at around 30°C and sets at 20 to 25°C.

 

Gelatin easily absorbs moisture and deteriorates in the air, so it should be stored sealed and dry, avoiding direct sunlight, high temperature and caking. Uses of industrial gelatin: First, it is used in the match-making industry, mainly using the foaming properties of the colloid to form pores that bind with oxidizers, igniters and fillers so that the match ignites instantly. Second, as an adhesive, it uses its high strength, high elasticity and high toughness to produce emery cloth and sandpaper, to bond wood and to bind books, and is used in gift-box assembly lines and in the musical instrument and furniture industries.

Third, electrolysis: adding it to the electrolyte helps produce a smooth, dense anodic deposit and eliminates production losses. Fourth, for textile fabrics, it can form a film on yarn bundles, increasing the toughness, strength, smoothness and elasticity of the fibers and preventing breakage. Fifth, it is used with dichromate to make photosensitive corrosion-resistant films for negatives. Sixth, it is used to extract hydrolyzed protein for use as an additive.
